San Rafael comes from Jhon Jairo Gómez’s farm in Huila, Colombia, from the area around San Agustín, at 1,950–2,000 meters above sea level. The coffee is washed, but has been processed with a longer fermentation than usual.

In the flavour you’ll find complex tropical fruitiness, lingonberry-like acidity, and floral notes. It’s a clear and distinctive coffee where the balance is lifted by a syrup-like sweetness.

The process on the farm is as follows:

The cherries are picked approximately every three weeks, fermented for 24 hours in sealed bags, and depulped the following day. After that, the coffee is fermented for another 36 hours, dry, in tiled tanks. Finally, the coffee is rinsed, drained in sacks, and dried on raised beds in the sun for 15–20 days. The cool climate means that Tabi ripens more slowly and keeps yields low, but at the same time improves the cleanliness and quality of the cup.
